Recipe: Chocolate vegan popsicles

INGREDIENTS

For the popsicles:
400ml full-fat coconut milk
1 large, ripe avocado
250g pitted, packed soft dates
55g raw cacao powder
Nut butter, as preferred
La Favo, your favorite flavor ( we used the Chocolini…)

For the topping:
Melted raw chocolate or melted dark chocolate
La Favo, your favorite flavor ( we used the Chocolini…)

Optional add-ins:
A few pinches sea salt
Vanilla (extract, seeds from a pod)
Chopped fresh fruit (strawberries, blueberries, raspberries, mango etc.)
La Favo, your favorite flavor ( we used the Chocolini…)

Optional toppings:
Cacao nibs
Finely chopped toasted nuts (cashews, hazelnuts, almonds, pistachios etc.)
Citrus zest (lemon, orange, lime)
Unsweetened desiccated coconut

RECIPE

1. Add all the popsicle ingredients, except the granola,  and blend until as smooth as possible.

2. Add water or more milk only if necessary – you want the mixture to remain quite thick.

3. Spoon the mixture in popsicle molds.

4. Firmly knock the molds on the counter a few times to remove any air bubbles.

5. Insert a popsicle stick into each mold and place in the freezer until set, minimum 6 hours.

6. Once frozen, remove run the mold under hot water until you can easily pull a popsicle out.

7. Decorate your chocolate popsicles, by drooling nut butter on top. Sprinkle with desired toppings. Drizzle them with melted chocolate.

8. Place back in the freezer to set until ready to enjoy!
